ZUCCHINI LASAGNA | |
1 lb. ground beef 1/4 c. onion 1 c. (15 oz.) tomato sauce 1/2 tsp. salt 1/2 tsp. oregano 1/2 tsp. basil 1/4 tsp. pepper 4 med. zucchini 1 c. creamed cottage cheese 1 egg, beaten 3 tbsp. flour 1 c. Mozzarella cheese Mix first 7 ingredients; brown and drain. Meanwhile, slice zucchini into 1/4 inch slices. Combine cottage cheese and egg. Layer zucchini. Sprinkle half the flour and top with cottage cheese mix and 1/2 the meat mixture. Repeat zucchini and flour. Top with Mozzarella cheese and remaining meat. Bake at 375 degrees for 40 minutes. Remove and sprinkle with cheese, if desired. |
