PUMPKIN COOKIES 
4 c. flour
2 c. quick oats
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 can (16 oz.) pumpkin
1 1/2 c. butter, softened
2 c. brown sugar
1 c. sugar
1 egg
1 tsp. vanilla
1 c. raisins or chocolate morsels

Combine flour, oats, soda, cinnamon and salt. Cream butter, add sugar. Beat until light and fluffy. Add egg and vanilla. Mix well. Alternately, add dry ingredients and pumpkin. Mix well. Stir in morsels. Drop on lightly greased pan. Drop by spoon. Bake at 350 degrees until done.
