BISCUITS 
1 1/3 c. flour
1 tbsp. baking powder
1/8 tsp. baking soda
1/4 tsp. salt
2 tbsp. shortening
3/4 c. to 1 c. buttermilk or sour milk (1 tbsp. vinegar and milk to equal 1 c.)
1 1/2 - 2 tbsp. shortening, melted in a 9 inch pan

Sift dry ingredients and cut in shortening with a fork or pastry blender. Add milk to make a soft dough. Don't over stir. Pour onto a floured sheet of waxed paper and form into a log. Divide into 12 portions. Heat shortening in a 9 inch cake pan. Form each portion into a ball by rolling in your hands. Lay in the melted shortening and ten turn over so the top is oiled. Place 9 biscuits around the outside and 3 in the center. Bake at 400 degrees for 10 to 12 minutes or lightly browned.
