SICILIAN MEAT LOAF 
1 lb. ground beef
1/2 c. tomato juice
2 eggs
1/2 c. soft bread crumbs
1 tsp. salt
1/4 tsp. oregano
1/4 tsp. garlic
1 tbsp. parsley flakes
2 c. Mozzarella cheese
6-8 thin slices, cooked ham

Mix all, except cheese, and ham until well blended. Line a 10 x 16 inch pan with foil and spread mixture into pan. Arrange ham slices on top overlapping, leaving a small border on edges. Sprinkle cheese over ham. Roll up meat, lifting paper away as rolling proceeds. Roll onto a greased 9 x 14 inch dish. Tuck ends in to seal mixture. Bake at 350 degrees for 1 hour. Let set 15 minutes before slicing and serving. Serves 6-8.
