PUMPKIN ROLL 
2/3 c. pumpkin filling
3 eggs
1 c. sugar
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. confectioners' sugar
6 oz. cream cheese
4 tbsp. butter
1 tbsp. vanilla
Walnuts (optional)

Use pumpkin filling without sugar or spices. Beat 3 eggs at high speed for 5 minutes. Adding sugar as you are beating eggs. Mix 2/3 cup pumpkin filling, 1 teaspoon baking powder, 2 teaspoon cinnamon, 1 teaspoon ginger, 1/2 teaspoon nutmeg, 1/2 teaspoon salt.

Grease cookie sheet and bake 15 minutes at 375 degrees. Sprinkle towel with sugar. Roll bread into towel. Let cook completely.

FILLING:

Mix together confectioners' sugar, cream cheese, butter and vanilla. Spread on cake, add nuts and roll it up.
