2 1/2 c. sugar
2 lg. potatoes, mashed
1 tsp. lemon flavoring
2 eggs
Pinch of salt
1 tbsp. flour
Coconut

Mix sugar, mashed potatoes and extract. Beat eggs and add to mixture. Add salt and flour. Sprinkle coconut on top and push down into potato. Cook at 350 degrees for one hour. Turn off oven and leave in one hour before removing from oven. Makes 2 pies.
