NANNY'S PRALINES | |
2 c. sugar 1 c. buttermilk or regular milk 1 scant tsp. baking soda 2 c. pecans 1/2 stick butter Pinch salt Lightly brown pecans in 300 degree oven - put aside. In heavy pot, mix milk, sugar, baking soda and salt. Cook on medium high heat, stirring constantly until the candy is almost done (drop a drop in a glass of cold water and test it. It should be firm to the touch). Add the pecans and butter and cook 5 minutes more. Take off heat and beat with large spoon. Drop by tablespoonful onto waxed paper. If it has cooked enough, you should be able to pick it up off the waxed paper as soon as it cools. |
