HEAVENLY CHICKEN | |
1/2 c. sliced green onion 2 tbsp. butter 2 tbsp. flour 1 c. milk 1 1/2 c. cracker crumbs (I substitute bread crumbs) 1 1/2 c. grated Parmesan cheese 8 lg. chicken breast halves, skinned 1 (10 oz.) pkg. frozen chopped spinach, cooked, drained 1 c. cooked cubed ham Saute onions in butter until tender. Blend in flour. Stir in milk all at once. bring to a boil and cook and stir until sauce is thickened and bubbly. Meanwhile, combine cracker crumbs and cheese. Dip chicken breasts in crumb mixture to coat. Arrange in 9 x 13 inch baking dish. Stir spinach and ham into white sauce. Spoon spinach mixture over chicken. Cover and bake at 350 degrees for 60-75 minutes. Uncover and sprinkle with leftover cracker crumbs and bake 10 minutes more. Serves 8. |
