SUMMERTIME PIE 
8 oz. Cool Whip
1 sm. pkg. instant pistachio pudding
2 cans mandarin oranges
8 oz. can crushed pineapple
1 chocolate wafer cookie crust

Drain canned fruit in a strainer extremely well. (Save juice for kids.) Combine all ingredients and put in pie shell. Chill 2 to 3 hours before serving. The way this pie sets depends on how the pineapple and oranges are drained. This is a quick, easy and light dessert that everybody loves.
