BEETS IN ORANGE SAUCE 
1 (1 lb.) can sliced beets
1 tbsp. cornstarch
3/4 tsp. salt
1 1/2 tbsp. sugar
1/4 c. orange juice
1/2 tsp. grated orange peel
1 tbsp. butter
2 tbsp. lemon juice

Drain beets. Save liquid; add water to make 1/2 cup. Combine cornstarch, salt, sugar and orange juice in a quart bowl. Stir in beet juice. Cook uncovered, on high for 2 1/2 to 3 minutes in microwave, or until mixture comes to a boil and is clear. Add lemon juice, orange peel and butter. Stir, add beets. Cook uncovered, on high for about 3 minutes or until beets are piping hot.

Since microwave ovens vary in power, you may need to adjust your cooking time.
