DOUG'S FAMOUS FISH 
2 lb. fish fillets (true cod or ling cod)
2 cans RoTel tomatoes
2 cans whole green beans
1 onion, cut into thin rings
Lemon pepper
Cajun seasonings

Use a baking dish that will accommodate fish laid out in a single layer. Make a solid layer of drained green beans in bottom of pan. Place RoTel tomatoes (with liquid) over beans.

Place fish on top of beans and tomatoes. Sprinkle fish with lemon pepper and cajun seasoning to taste. Lay onion slices on top of fish. Bake at 350-375 degrees until onions start to blacken.
