ROLO COOKIES 
2 1/2 c. flour
3/4 c. cocoa
1 tsp. baking soda
1 c. sugar
1 c. brown sugar, packed
1 c. butter, softened
2 tsp. vanilla
2 eggs
Rolo candies

Beat sugars, butter, eggs and vanilla. Add flour, cocoa and soda. Shape 1 tablespoon of dough around each Rolo.

Bake at 350°F for 5 to 7 minutes. Let set 2 minutes before removing from pan. Sprinkle with sugar-cocoa mixture or drizzle with melted white chocolate.

These are delicious cookies! My son took home 1st place in his Cub Scout bake off with these cookies. He added a cup of chopped pecans and drizzled with white chocolate. Yummy!

I have been baking 4-6 dozen cookies almost every week of a year for over 5 years for a weekly meeting. These are one of the favorites, hands down. I like to chop up pecans and after I roll them press some of the pecans into the tops of the unbaked cookies. You can't go wrong on this one!

Wow, wow, WOW! Wondering what to do with all my left over Halloween candy and I FOUND it! I halved the recipe and followed it to a "T" and it was perfect! I used a cookie disher and it made 24 cookies exactly (again I halved the recipe) the only thing I did was chill the dough before rolling. We we waiting for dinner to cook and thought well why not just get this prep going! The kids had a BLAST helping and I do think chilling the dough helped, especially as your hands warm up it's easier to roll the Rolo in em. I did not roll them in any cocoa or sugar and they were still to DIE for! I do think next time I will Tom them with chopped pecans...YUMMY!
