SALTED HERRING AND APPLE SALAD 
1/2 c. sour cream
1 1/2 tsp. vinegar
1 1/2 tsp. sugar
1/2 tsp. horseradish
1 (5 oz.) jar pickled herring, drained and chopped
1 med. onion, chopped
1 apple, cored and chopped
Lettuce leaves
Pimento strips

Combine sour cream, vinegar, sugar and horseradish; blend well. Let stand 10 minutes. Combine herring, onion, apple, and pickles; toss lightly. Add dressing; mix lightly. Chill. Serve on lettuce leaves. Garnish with strips of pimento. 4 servings.
