THE RANGERS' APPLE BARS 
DOUGH:

2 1/2 c. flour
1 c. butter
1/4 tsp. salt
1 egg, separated
2/3 c. milk

FILLING:

6 c. apples, sliced
1 1/3 c. sugar
2 tbsp. cinnamon
2 tbsp. flour

GLAZE:

1 c. powdered sugar
1 tbsp. butter, softened
2 tsp. water or just enough for spreading

CRUST: Mix flour, butter, and salt until crumbly. Add egg yolk that is mixed with 2/3 cup milk. Stir into flour mixture. Divide dough in half. Roll out and place in greased jelly roll pan (15 x 10 inch). Spread apple filling on dough and top with remainder of dough which has been rolled out also. Brush top with some of the egg white. Bake 10 minutes at 400 degrees; then 25 minutes at 360 degrees. Frost while warm.
