APPLE RAISIN BRAN MUFFINS 
1 1/2 c. shreds of wheat bran cereal
1 c. skim milk
1/4 c. butter or spread, melted
1/2 c. honey
1 lg. cooking apple, peeled, cored & grated (1 1/2 c.)
3/4 c. raisins
1 egg, well beaten
1 tsp. cinnamon
1 1/4 c. flour
2 tsp. baking powder
1/2 tsp. baking soda

Preheat oven to 400 degrees. Grease 12 muffin cups. In large bowl, soak cereal in milk 15 minutes. Stir in butter, honey, apple, raisins, egg and cinnamon. In another bowl, combine remaining ingredients. With rubber spatula, fold flour into apple bran mixture. Just enough to moisten. Do not over mix. Evenly distributed among muffins cups. Bake 20 minutes or until done.
