HOLIDAY PUMPKIN PIE CRUNCH 
1 (15 oz.) can pumpkin
1 (12 oz.) can evaporated milk
3 eggs, beaten
1 1/2 cups sugar
4 tsp. pumpkin pie spice
1/2 tsp. salt
1 pkg. yellow cake mix (your favorite)
1 cup chopped pecans (optional)
1 cup (2 sticks) butter, melted

Preheat oven to 350°F.

Combine pumpkin, evaporated milk, eggs, sugar, spice and salt in a large bowl. Beat with an electric mixer on low speed until well blended. Pour into a greased 13x9-inch baking pan. Sprinkle with cake mix; top with pecans (if using) and drizzle with butter.

Bake at 350°F for 50 to 55 minutes, until golden. Cool and cut into squares; dollop with whipped topping if you'd like.

Makes 16 servings.
