ROBERT'S SPARE RIBS OVER RICE 
2 to 3 lbs. pork spare ribs

(Have butcher cut ribs apart in 1 inch chunks or cut up country style ribs in 1 inch chunks.)

2 tbsp. sherry
4 tbsp. soy sauce
6 tbsp. cider vinegar
8 tbsp. sugar
10 tbsp. water

Mix sherry, soy sauce, cider vinegar, sugar, and water together in skillet. Warm mixture until sugar is dissolved then add all the rib pieces. Cover and simmer 40 minutes. If ribs are not quite tender, simmer a few more minutes. Uncover and boil rapidly until most of liquid evaporates....stirring constantly. Serve rib pieces over rice with extra soy sauce at table. Serves 4.
