EAST INDIAN SPARE RIBS | |
2 c. pineapple pie filling 2/3 c. chopped scallions 1/4 - 1/2 c. lemon juice 1/4 c. water 2 tbsp. mild curry powder 1 1/2 tsp. salt 1/2 tsp. ginger 1/4 c. apple juice or sherry 4 lb. country spare ribs or pork roast Roast the pork at 450 degrees in a shallow pan for 30 minutes. Combine all items except juice or sherry in a sauce pan. Bring to a boil and simmer 1 to 2 minutes. Add sherry or juice. Spoon over pork. Continue to bake at 350 degrees for 1 hour. |
