SWEET POTATO PIE WITH MERINGUE 
3 lg. sweet potatoes, cooked
2 tbsp. melted butter
2/3 c. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 whole egg
2 eggs, separated
4 tbsp. sugar
Pinch of salt

Mash sweet potatoes. Mix with butter, sugar, spices, salt, the whole egg and the 2 egg yolks. Fill uncooked pastry shell and bake until firm. Beat egg whites, adding 4 tablespoons sugar and pinch of salt. Spread over pie. Bake at 350 degrees for 10 minutes. Turn off oven. Let meringue brown in retaining heat.
