ENCHILADAS 
1 lb. ground meat
1 pork steak, cut into sm. pieces
1/4 c. onion, chopped
1-2 cloves garlic, minced
1/4 c. flour
2 tbsp. chili powder
3/4 tsp. oregano
1 tsp. salt and pepper
1 c. water
3 c. V-8 juice
Corn tortillas
Longhorn cheese, grated
Chopped onion

Cook above ingredients 45 minutes. Fry in small amount of oil the corn tortillas. Place one on plate, top with generous amount of mixture, grated Longhorn cheese and chopped onions. Layer, if desired. Bake 5 minutes at 350 degrees or until cheese melts.
