PASTA 
1 tsp. salt, or less
2 c. flour or 1 1/2 c. flour and 1/2 c. semolina
3 eggs
4 tbsp. water or 1 tbsp. olive oil and 3 tbsp. water

In humid weather, use less water.

Break eggs in measuring cup and add water; beat to break up yolks. Mix salt into flour in bowl, make a well. Dump in liquid and stir until liquid is absorbed. Dump onto board and knead for 5-10 minutes. Let rest in plastic bag for 1/2 hour. Use pasta machine or roll and cut for ravioli, lasagna, or tortellini.
