FRESH APPLE CAKE 
1 1/2 c. vegetable oil
2 c. sugar
3 eggs
3 c. all purpose flour
1 tsp. salt
2 tsp. cinnamon
1 tsp. baking soda
2 tsp. vanilla
3 c. chopped Granny Smith apples
1 c. chopped walnuts or pecans
1 c. golden raisins

Mix oil, sugar and eggs. Add dry ingredients and blend. Mix in remaining ingredients. Mixture will be a heavy dough. Bake 1 hour and 45 minutes at 325 degrees in greased and floured tube pan or in 2 loaf pans.

SAUCE:

1/2 c. buttermilk
1 stick butter
1 c. brown sugar
1 tsp. vanilla
1/2 tsp. baking soda

Mix all ingredients and boil for 2 minutes. Pour immediately over cake while still in baking pan and still hot. Wait until cake is cold to turn out of pan. Freezes well.
