COCONUT POUND CAKE 
3 sticks butter
2 1/2 c. sugar
6 eggs
3 c. flour sifted with 1 tsp. baking powder
1 c. evaporated milk
1 tbsp. lemon extract
1 can flake coconut

Cream butter and sugar well. Add eggs one at a time. Add flour and milk alternately. Add lemon extract. Fold in coconut. Bake in tube pan, greased and floured, in oven, 325 degrees, for 1 hour. Cool in pan.
