SOUTHERN STYLE LEMON SPONGE | |
1 1/4 oz Knox gelatin powder 4 medium eggs juice of 3 lemons 2 cups sugar 1 cups cold water 2 cups boiling water Soak gelatine powder in cold water for 5 minutes in a Pyrex bowl. Pour boiling water into the bowl, then add the juice of lemons, and sugar. Place in refrigerator until it begins to thicken but is not fully gelled (about 20-30 minutes). Whip the gelatine until frothy and return to refrigerator for another 10 minutes or so. In a separate, clean bowl, whip the egg whites until stiff, then beat together with the gelatine mixture until light and fluffy. Refrigerate for at least 2 hours. When ready to serve, dip your mold into hot, then into cold water and invert onto serving dish and serve as is, or drop onto sponge cake or lady fingers. Also goes well over lemon cake.
