TOFU STUFFED SHELLS 
1 lb. tofu, hard kind
1 (8 oz.) pkg. shredded Mozzarella
1/2 c. Parmesan
1 pkg. cooked, chopped spinach
Lg. pasta shells
2 lb. spaghetti sauce

Combine tofu, Mozzarella, Parmesan and mix together in blender. Cook chopped spinach, drain and squeeze dry. Then blend into tofu mixture. Cook pasta shells according to directions. Stuff shells with mixture and pour spaghetti sauce on top. Cover with foil and cook until heated through, about 45 minutes at 350 degrees.
