HUMMINGBIRD CAKE | |
Preheat oven to 350 degrees. Bake for 25-30 minutes. DO NOT USE MIXER! 3 c. flour 1 tsp. cinnamon 1 tsp. salt 2 tsp. baking soda 2 c. sugar 1 1/2 c. vegetable oil 3 eggs, beaten 1 1/2 tsp. vanilla 1 c. pecan pieces 1 (8 oz.) can crushed pineapple with juice 2 c. smashed bananas Bake; let cool in pans 10 minutes, then remove. FROSTING: 1/2 c. butter, softened 8 oz. cream cheese, softened 16 oz. box powdered sugar 1 tsp. vanilla Stir until creamy with no lumps. Apply to cooled cake. Tony & Tammy Ontiveros |
