HAM & EGG BRUNCH CASSEROLE 
1 loaf white bread, crust removed
3 c. diced ham
2 c. shredded sharp cheese
6 beaten eggs or egg beaters
2 1/2 c. milk or nonfat dry milk mixture
Salt & pepper to taste
1/3 c. melted butter
Paprika

In 9 x 13 inch glass pan, cover bottom with slices of buttered white bread. (Can use Pam spray on pan and no butter.) Cover with diced ham. Top with cheese. Dice 6 to 8 slices of white bread and place over cheese. Beat eggs with milk. Add salt and pepper. Pour over entire mixture soaking bread.

Drizzle melted butter over top (can eliminate this to reduce fat). Sprinkle with paprika. Refrigerate covered overnight. Bake, uncovered for 1 hour at 350 degrees. Let sit 5 minutes before serving. Keeps well in refrigerator and microwaves quickly to reheat. Serves 6.

Assemble the night before. Leftovers reheat in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
