ZUCCHINI PIE 
3 c. zucchini, grated
1 sm. onion, chopped
1 c. Bisquick
1/2 c. oil
1/2 c. Parmesan cheese
4 eggs
1 tsp. parsley
Salt and pepper to taste

Mix all ingredients. Pour into greased 3 quart casserole or large pie pan. Sprinkle with a little Parmesan cheese. Bake at 350 degrees for 45 - 50 minutes.
