PUEBLO OVEN BREAD | |
9 c. flour 2 pkgs. dry yeast 1/2 c. warm water 2 tsp. sugar 2 tsp. salt 4 tbsp. lard or shortening 2 c. water Soften yeast in water. Mix melted lard, salt, sugar and yeast in a large bowl. To this add water and flour a bit at a time mixing well after each addition. Knead in last of flour until dough is smooth. Place ball of dough in a large oiled bowl, cover with a damp cloth and let rise in a warm place until doubled in size. Turn out into lightly floured bowl, punch down, then knead for 5 minutes. Shape into four round loaves cover and let rise for 25 minutes. Place loaves in oven preheated to 400 for 50 minutes until brown and loaves sound hollow when tapped. |
