ENCHILADAS 
2 lbs. ground turkey
1-2 med. onions, chopped
2 cloves garlic, minced
1/4 tsp. chili powder
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground cumin
12 corn tortillas
8 oz. can tomato sauce
8 oz. Colby cheese, grated
1/4 c. safflower oil

Cook meat and drain. Return to stove and add onion, garlic and spices. Add tomato sauce and 1 can of water. Simmer 30 minutes or until flavors blend. Pass tortillas one by one through 1/4 cup hot safflower oil in a small pan on the stove.

Fill each tortilla with grated cheese and chopped onion to taste. Roll up tortillas and place, seam side down, in baking dish. Cover tortillas with sauce and bake at 350 degrees uncovered for 25 minutes. May sprinkle more cheese over enchiladas during last few minutes in the oven.
