BEEF WITH BROCCOLI 
1/2 lb. beef tenderloin, slice against grain 1/8 inch thick and 1 inch square slices
1 tsp. sugar
1/2 tbsp. soy sauce
1/2 tsp. baking soda
2 tsp. cornstarch
1 tbsp. water
1 tbsp. oil

Marinate beef tenderloin with sugar, soy sauce baking soda cornstarch and water. Marinate for 30 minutes. Add 1 tablespoon oil before adding to wok.

SAUCE:

1/2 tbsp. thin soy sauce
1 tsp. oyster sauce
1/2 tbsp. rice wine
1 tsp. sugar
1/2 tsp. cornstarch

Mix together. 8 scallions cut into 1 inch sections 8 oz. broccoli, cut same size as beef, remove tough skin.

Put in boiling water for 30 seconds, rinse in cold water, drain and dry.

Heat wok, swirl in 3 tablespoons oil, brown ginger root, scallions, then add beef and marinade. Stir until pink and remove from wok. Heat 1 tablespoon oil, stir fry broccoli for a few seconds, ad beef and sauce mixture. Stir quickly over high heat until mixed. Serve hot. Serves 4.
