2 c. mashed sweet potatoes
1 stick butter
2 eggs
1 c. sugar
1/2 c. orange juice
Grated orange rind to flavor
1 unbaked pie shell

Skin, boil, and mash sweet potatoes. Cream butter, eggs, and sugar, then add the potatoes. Add the orange juice and rind. Pour in unbaked pie shell and bake at 300 to 350 degrees for 25 to 30 minutes until crust is brown.
