SWEET POTATO PIE 
3 lg. sweet potatoes
1 stick butter
2 c. sugar
6 eggs
1 tbsp. nutmeg
1/2 tsp. vanilla
3/4 c. evaporated milk
2 unbaked pie shells

Cook 3 large sweet potatoes with peelings in boiling water until done. Test if done by sticking fork in. Add butter, sugar and beat until mixed well and butter is melted. Add 6 eggs and beat well. Mix nutmeg, vanilla and evaporated milk. Mixture will be thin. Pour into unbaked pie shells and bake for 45 minutes at 375 degrees. Pies may have to bake longer if mixture is thick.
