GERMAN POTATO SALAD 
2 1/2 c. potatoes, cooked & diced
3 tbsp. bacon fat
1/4 c. onion, finely chopped
1 tbsp. flour
1 1/2 tsp. salt
1 tbsp. sugar
1/4 tsp. dry mustard
3 tbsp. vinegar
3 tbsp. water
2 tbsp. pickle relish
1/3 c. celery, diced
2 tbsp. green pepper, chopped

Brown onions lightly in bacon grease. Mix flour, salt, sugar, mustard and stir to combine. Add vinegar and water stirring constantly until thick. Mix pickle relish, celery, green pepper with cooked potatoes. Add hot dressing and mix lightly, but thoroughly. Turn into a baking dish and heat for approximately 20 minutes at 350 degrees. Serves 4.
