RICH CHOCOLATE CUPCAKES 
1 1/4 c. flour
1 c. sugar
1/3 c. cocoa
3/4 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1 c. buttermilk
1/3 c. vegetable oil
1 egg

MINI-CHIP CHEESE FILLING:

8 oz. cream cheese
1/3 c. sugar
1/8 tsp. salt
1 egg
1/2 c. Hershey's mini chips

Prepare mini chip cheese filling and set aside. Combine flour, sugar, cocoa, baking soda and salt in a large mixing bowl. Add buttermilk, oil, egg and vanilla. Blend well. Fill paper lined muffin cups 1/2 full with batter. Spoon about 1 tablespoon cheese filling onto each cupcake. Bake at 350 degrees for 30 minutes. Yields 24.
