MOZZARELLA CHICKEN 
6 to 8 chicken breasts
Italian flavored bread crumbs
Mozzarella cheese, sliced and shredded
2 cans (1 lb. 12 oz. each) whole tomatoes
1 tsp. salt
Pepper
1 tbsp. basil
Shortening
Mushrooms (less than 8 oz.)
Pinch oregano
4 tbsp. flour
2 eggs

Mash tomatoes. Add garlic, salt, pepper and basil. Cook uncovered on medium heat for 10 minutes. Stir when bubbles. Add mushrooms and oregano. Turn heat to low. Cover and cook 20 minutes. Stirring occasionally.

Skin and bone chicken. Put flour, eggs and bread crumbs in different bowls. Roll chicken in flour than eggs, then bread crumbs. Brown in oil. Put chicken in casserole dish. Cover with half the sauce. Sprinkle with shredded cheese. Cover with the rest of the sauce. Cover with cheese slices. Place in 350 degree oven until the cheese melts (5 to 10 minutes). Let cool several minutes, then serve.
