3 twists fine vermicelli 1/2 c. lard or oil 1 onion, minced 2 ripe tomatoes, peeled and chopped or can tomatoes 2 c. chicken or beef broth or water 1 tsp. salt 1 tsp. pepper 1/2 c. grated cheese Brown vermicelli in hot oil or lard, but not too brown. Take from the pan. Put in the pan the onion, tomato and liquid, salt and pepper. When this begins to boil, add the fried vermicelli; cover and cook until dry; sprinkle the grated cheese over the vermicelli when serving. Serves 4. |
