AUNT ROSE NESTA'S LENTIL SOUP 
1 (1 lb.) bag lentils
1 c. celery, chopped
1 c. carrots, chopped
1 onion, chopped
Chicken bouillon cubes, to taste
1 c. rice, cooked

In soup pot, place lentils and cover with water. Bring to a simmer and cook for approximately 15 minutes. Add celery, carrots and onions and continue cooking. Add more water if needed. When vegetables are completely cooked, add bouillon to taste and simmer until dissolved (again, add water if needed). Before serving, combine with rice.
