LINGUINI WITH FRESH TOMATO SAUCE 
4 tbsp. olive oil
2 tbsp. minced garlic
3 lbs. ripe tomatoes, chopped
1/2 c. chopped basil
3 tbsp. vinegar
1 lb. linguini

Heat 1 tablespoon oil over medium heat. Add garlic and stir 3 minutes. Add tomatoes with their liquid, oil, basil and vinegar. Season with salt and pepper. Let stand several hours. Cool lingini. Drain and place in large bowl. Add sauce and toss. Sprinkle with Parmesan cheese.
