RED VELVET COOKIES 
1 box red velvet cake mix
2 eggs
1/3 c. oil

Mix ingredients together until smooth. Roll into 1-inch balls and place on lightly greased cookie sheet. Use bottom of a glass to flatten slightly.

Bake at 375°F until the top crackles (8 to 10 minutes). Cool and frost with cream cheese frosting.

Cream Cheese Frosting:

1 (8 oz.) cream cheese, softened
1/4 stick butter, softened
2 tsp. milk
1 tsp. vanilla
4 c. powdered sugar

Combine cream cheese, milk and vanilla in a mixing bowl. Beat with mixer on low speed until creamy. Gradually add powdered sugar beating until smooth.
