FRENCH ONION RICE 
1/4 c. long grain rice
2 qt. boiling water
1 tsp. salt
1/4 c. butter
4 c. thinly sliced large onion (about 3)
1/2 tsp. salt
1/8 tsp. paprika
2 tbsp. grated Parmesan cheese

Cook rice in water and salt, uncovered 5 minutes, then drain at once. Melt butter in 2 quart casserole in oven. Stir in onions. Add salt and stir onions in butter until nicely coated and yellow. Add rice and stir to distribute evenly. Cover and bake in slow oven at 325 degrees for 1 hour. Sprinkle with paprika and cheese.
