RAISIN SPICE COOKIES 
2 c. raisins
1 lg. egg white
1 c. frozen unsweetened apple juice concentrate, thawed
3 tbsp. butter or softened butter
1 c. quick cooking rolled oats
1 1/2 c. whole wheat flour
1 tsp. baking soda
1 tsp. ground cloves
1/4 c. raisin water

1. Place raisins in saucepan and cover with water, boil 10 minutes. Drain well and save water.

2. Mix egg white, apple juice concentrate and butter.

3. Add flour, soda, cinnamon and cloves; mix well.

4. Add 1/4 cup reserved raisin water.

5. Place by teaspoonfuls onto cookie sheet that has been sprayed with nonstick vegetable coating.

6. Bake at 350 degrees for 10 minutes, or until lightly brown. Yield about 3 1/2 dozen cookies.
