SCALLOPED PINEAPPLE 
6 tbsp. flour
3 cans chunk pineapple, drained but reserve 1 c. of juice
1 c. pineapple juice
1 1/2 c. sugar
2 c. grated Colby or Cheddar cheese
1 stick butter
2 sleeves Ritz crackers

Mix together first 5 ingredients. Pour into greased 13 x 9 inch pan. Melt butter. Crush Ritz crackers and mix with butter. Sprinkle on top. Bake at 350 degrees for 30 minutes. Great served with ham or pork.
