SESAME WHEAT PILAF | |
1/2 onion, finely chopped 1/4 c. vegetable oil (corn, Canola sunflower, safflower) 1/3 c. pistachio nuts, finely chopped or diced almonds 1 c. bulgur wheat 1/4 c. sesame seeds, toasted 2 c. chicken stock, hot 1/2 tsp. salt 1 tsp. fresh parsley, finely chopped 1 garlic clove 1. In large skillet saute onion in vegetable oil until soft. 2. Add bulgur wheat and sesame seeds. 3. Stir until wheat is coated with oil. 4. Add stock, salt, parsley, and garlic clove. 5. Cover, if stock is hot enough no more cooking is necessary. Can let sit covered for 30-60 minutes. 6. When cooked, stir, remove garlic clove. 7. Sprinkle with pistachio nuts and diced almonds. High in fiber, nutritious, a great substitute for potato or stuffing. |
