ZUCCHINI & EGGPLANT 
Sliced or diced eggplant & zucchini
Tomatoes
Onions
Green pepper (sm. amount)
Monterey Jack cheese
Garlic powder
Salt, pepper, oregano

Arrange in layers. Add small amount of chicken broth with a little hot sauce if desired. Bake at 350 degrees for 35 to 40 minutes.
