BANANA MUFFINS 
1 egg
2 c. Bisquick baking mix
1 1/4 c. mashed ripe bananas
1/3 c. sugar
3 tsp. vegetable oil

Grease bottoms only of 12 medium muffin cups or line with paper baking cups. Beat egg slightly; stir in remaining ingredients just until moistened. Divide batter evenly among cups. Bake until golden brown, about 15 minutes.
