NORTH CAROLINA HUSH PUPPIES | |
1/2 c. flour 1 c. cornmeal 1/2 tsp. salt 1/2 med. sized green pepper, finely chopped 1/2 med. onion, finely chopped 1 egg, beaten Scant 1/2 c. water Salad oil 1 1/4 tsp. baking powder Combine flour, cornmeal, salt, green pepper, onion and egg - mixing well. Stir in enough water to make a thick batter. Refrigerate at least 12 hours. Then stir in baking powder and drop batter by tablespoons into hot salad oil. Fry until golden. Makes about 2 dozen. |
