SPARTAN VEGETABLE CASSEROLE 
1 c. celery hearts, sliced
3 med. onions, sliced
3 med. zucchini, sliced
3 carrots, sliced
1 green and/or red pepper, chopped
1 pkg. frozen French green beans
3 bay leaves
2 cloves garlic, chopped
Salt & pepper
1/2 c. oil
1 (16 oz.) can peeled tomatoes
4 med. peeled sliced potatoes

Combine everything with the exception of potatoes in large casserole for oven baking. Bake covered, in preheated 350 degree oven for about 40 minutes or until celery is tender. Stir at least twice. Add potatoes; push down into liquid.

Bake uncovered for about 20 minutes longer until potatoes are tender and liquid has condensed. Yield: 6-8 servings.
