RICE WITH VEGETABLES 
1/2 c. butter
1/2 c. diced onion
1/2 c. green peppers, diced
1/2 c. red peppers, diced
1 pkg. frozen vegetables, mixed
2 cans chicken broth
3 c. rice
2 1/2 tbsp. salt

Melt butter, sauce onions and peppers. When soft, add additional vegetables and salt. Saute all for a few minutes, then add chicken broth and rice, put on medium heat. Watch rice mixture, when water begins to boil, reduce heat, cover and stir rice every 10 minutes. Rice is ready in approximately 40 minutes. Serves 4.
