VEGETABLE RICE 
1 1/2 c. cooked rice
2 med. potatoes
2 onions
1 tomato
1/2 c. peas or mixed vegetables
3 tbsp. vegetable oil
1 whole clove, sm. cinnamon stick
1/2 tbsp. coriander cumin powder
1/2 tsp. paprika
1/2 whole mustard
1 1/2 tsp. lemon juice
1 tbsp. sugar

In a heavy saucepan, put vegetable oil and add whole clove, cinnamon stick and whole mustard; then saute chopped onions until they are soft. Add peeled and thinly sliced potatoes, peas (or mixed vegetables), small pieces of tomato, curry powder, pepper, salt, coriander and cumin powder.

After potatoes and peas are done, then add cooked rice. After 5 minutes, add lemon juice and sugar. (Add more oil, if needed.) Then take out in serving dish and decorate with parsley or French fried potatoes, or slices of tomato.
